Short Order Cook

There are a LOT of things that I remember about being young. And a LOT that I don't. There are tons of things that my Mom taught me that I implement in my own mothering, and some that I can't.

But one thing my Mom always insisted was that we ate what she prepared for us. And she would say, "look, I'm your Mom, I'm not a short order cook."

That was brilliant. I use it frequently. Everyday, in fact. I'm makin' one breakfast, one lunch, and one dinner. If it's not your favorite, well, too bad. Next time it might be. My Mom's not mean, and neither am I. It's just that you gotta learn to like new foods. And not get your way all the time.

That's how life will treat you. And it's best to learn early. It will hurt them more in the end, when they have to learn as an adult, that people won't cater to their every whim. Mostly, that a boss could care less what they want, or "don't like". That's just life.

It was special, when my Mom said she WOULD make us different things. And sometimes it was on "egg morning". She'd let us decide how we'd like our eggs. And she'd make them. Over easy, scrambled, omelette. It seemed like a restaurant. And it was great, because it didn't happen everyday.

Well, today was "egg morning" at our house. My son ordered a pair of over-mediums. My daughter ordered some scrambled. (without black specks--that's the pepper) And that left me to make something amazing for myself.

Wanna see my FAVORITE thing to make for "egg morning?"



Start off with your favorite fresh ingredients. I use whatever I happen to have around. This morning it was spinach, tomatoes, onions, mushrooms, and some fresh basil. I like it better with red onions...'cause I'm an onion girl. I've also used just a spring mix of greens instead of spinach. It works too.

I made a 2 egg omelette. Of course, you can do more. But this works out to be just right for my "watching my weight" portion. (about 6-7 points for any Weight Watchers out there)

So mix up your 2 eggs with a little Skim Milk. And add some salt & pepper. Pour the egg mixture into a HOT pan that has been sprayed pretty liberally with a non-stick spray. (I don't use butter. Ever. It's not worth the calories to me)



Then just sprinkle all your yummy goodness all over the sizzling eggs. And let it cook for a few.

Then you add the magic ingredient.

Wait for it....

Gorgonzola Cheese Crumbles.

If you're not familiar. Gorgonzola is a crumbly cheese. Kind of LIKE blue cheese, but not nearly as strong. It's used in lots of Italian cooking. And it's yummy! (plus it makes you feel real ADULT. It's a big person's cheese)

You might feel leery....if your not a fan. But I really think you'll like it. (maybe not, who knows...but you should at least TRY IT.) Start with the "less is more" theory. I love it, and still I don't use a ton.

Then fold over your omelette and flip until it's cooked.

This isn't always the most "polished" looking omelette...I think it's how many fresh ingredients are in there. Sometimes mine looks like a scrambled mess. But it's all going to the same place...right?



Sprinkle a few of the freshies on top. And a little extra cheese. And WAH-LAH!

Short order, fancy, heaven. You can also add a little bacon crumbles. Obviously, not as healthy....but SOOOO good. (let's be real, bacon makes EVERYTHING better!)

Seriously, it's so yummy!

And guess what? My little yahoos ended up eating most of mine. I had to make a second one. Yep. I guess they like all this stuff. I could've not been a "short order cook" this morning after all.

Who knew?

    I am also a mom who doesn't make more than one thing. I also have my girls eat all sorts of different things when they are just starting solids and guess what...they both love salads and all sorts of crazy things kids never eat.

  5. I looove to make my omelets that way. 'Cept I haven't ever tried the "adult" cheese. I like to had a few ham or turkey slices. You know....just the lunch meat kind. Also, try using 1 egg and an egg white. You won't know the difference.

    Are you still doing Weight Watchers? You can't have any more to lose!

  6. Yum! We have the same "you get what you get and you don't throw a fit" rule around here. There are only 2 or 3 things all my kids like...and NONE of them are healthy. We still get the whining though. Let me know if you find a way to stop that.
