Why share this little tid-bit? Well, any time I think of sandwiches that I love, I shorten their name to "sands" just to make it seem like we're buddies. And "sands" always reminds me of that announcer saying, "Like sands through the hourglass, so are the days of our lives." It doesn't actually have ANYTHING to do with this post!
What are we actually talking about today?
My FAVE Caprese Sands
These sandwiches are amazing, divine, delightful...you're gonna love them! They are summery, and a great way to use up the things you may have growing in your yard.

Start with some crusty bread/rolls. I really like the ones at Costco, but any crusty bread will do. Brush on some Extra Virgin Olive Oil, and some balsamic vinegar. You can use as much/or as little balsamic as you like. I like.....MUCH!
Throw them in an oven that has been preheated to 375 degrees. And warm for about 7-10 minutes. (Depending on how crunchy you want them)

Then you need some fresh Mozzarella. I love this stuff. It can be kind of pricey. But I always buy mine at Costco. You can get 2 logs for around seven dollars. (which ends up being quite a savings!!) Cut it into thin slices, and put it on your warmed rolls. I like to throw it back in the oven for about 4-6 minutes and melt the cheese a bit.

While your cheese is melting, get out your tomatoes and fresh basil. Unfortunately, all living things die in my care...so I have to buy tomatoes. I like Romas the best.
I do, however, have a fresh basil plant growing on my back deck. It's about the only thing I can keep alive. And it's SUCH a savings. Basil is EXPENSIVE! I keep it all summer so I can make these sandwiches...and a couple other dishes. It is awesome to have it on hand.
When your cheese is all melty, throw on the thinly sliced tomatoes and chopped basil leaves.

Add salt and pepper, to taste, and you're set. About 15 minutes total prep. And I'm not kidding, these puppies ARE TO DIE FOR!! I think they're as good, or better than any restaurant variety I've had.
Go forth and make some "Sands". You won't be disappointed!
(and if you're so inclined to catch a bit of "Days" as well....you'll probably follow right along. I tuned in the other day, just for fun. It hasn't changed in 20 years!! Except it moves slower than cold tar in January!)

ReplyDeleteThose look yummy! My mouth is watering just thinking about it. I forgot about how we kicked our legs during the intro. I wish I had that memory of yours. I can't remember ANYTHING! I think it's hilarious that we tried to be so sneaky and hide it from our mothers. I was terrifed of mine finding out. Now that I'm a parent I wouldn't want my 5th grader watching that crap. 5th grade really? I can't believe we were that young.
