And even though the peeking of the sun reminds me that swimsuit season is upon us, and I should be eating only leafy greens and fresh fruit...
I just can't pass up a rainy day cookie making session.
Especially this delicious recipe from my childhood. It is a FANTASTIC one to make with kids. Because it does not require a mixer. In fact: DO NOT MAKE THIS RECIPE WITH A MIXER. THEY WON'T TURN OUT.
HONEY COOKIES
- 2/3 c. vegetable oil
- 1 c. sugar
- 1 egg
- 1/4 c. honey
- 3/4 t. ground mace
- 2 t. baking powder
- 2 c. flour
Beat the oil and sugar together with a fork.
Then add the egg and beat again until well mixed.
Stir in the honey.
Sift the flour, powder and mace. And mix dry ingredients together with egg mixture.
(still using just the fork)
Mixture should be well incorporated, but will be a fairly wet dough.
Take portions (approx. 1 tablespoon size) and roll into smooth balls. Roll cookie dough balls in sugar.
Bake cookies @ 350 12-15 minutes (I like 12 minutes because they're softer when they're just underdone)
These cookies are so much fun. It's so fun to have something different than the traditional peanut butter or chocolate chip.
They have a really interesting taste because of the addition of the Mace. You might not have Mace at your home. But I have it EXCLUSIVELY for this recipe. I even add a little extra.
Now I'll just sit here, eat my cookies, and hope that it stops raining. Or not. Because a rainy day and an Eeoyre attitude every now and then, is kind of fun.
